BEETROOT SALAD WITH CUCUMBERS
AND SET YOGURT
Ingredients:
· 3-4 beetroots with leaves
· 1 l Seal of Quality set yogurt
· 2 peeled fresh cucumbers, cut in round pieces
· 1 teaspoon finely chopped mint
· 3 hard boiled eggs, cut into small pieces
Preparation:
Boil the beetroot together with the leaves than cut
in strips and mash the leaves. Combine set yogurt, cucumber,
beetroots, mint and eggs, and mix well. Keep in the
fridge before serving.
