CHEESE SOUP

Ingredients:

50 gr butter
50 gr flour
1 l soup stock
125 gr Seal of Quality cheese
salt, black pepper, nutmeg
finely chopped parsley
fried bread dices (in butter or oil)

Preparation:

Melt butter and gradually add flour. Pour in the cold soup and boil. Add the cheese cut in small pieces and continue to boil until the cheese melts. Then add some salt, black pepper and nutmeg. Before serving, sprinkle with some finely chopped parsley. Serve with fried (white) bread chunks (they should be crunchy) sprinkled on top.
